Our Costa Rica Marvin Barrantes Sarchimor Honey Microlot comes from a small 18 acre farm in Costa Rica’s West Valley belonging to owner and producer Marvin Barrantes. The cherries are handpicked and monitored in the wash tanks to separate low quality floaters, with 100% of the mucilage left on the remaining beans during drying. Drying takes place on African beds, followed by 12 days in a solar greenhouse. The beans then rest in parchment for two months before being hulled and sorted. Ships in Grainpro bags.
Berry aroma. Fruity notes of strawberry and lemon with bright acidity
Marvin began milling operations in 2012 with a small pulper and several African beds, opting for all the coffee to be 100% sun-dried. The first single varietals harvested were Caturra, Sarchimor, and Millennium. The mill, named “Reina Elizabeth,” honors the farm’s previous owner, Elisa Alfaro Hidalgo (1928-2016), who was Marvin’s mother. Doña Elisa had striking blue eyes, leading the locals in San Luis to say that only a queen could have eyes like hers, thus the nickname “Reina Elizabeth.” In addition to her remarkable eyes, her kindness was also queenly.
The honey process method of this Marvin Barrantes Sarchimor Microlot allows the beans to retain much of its fruity pulp on the bean after it’s pulped. The cherry’s remnants then ferment into the bean, adding sweetness and complexity. Mill operators attentively rotate the beans while drying for uniformity and to avoid rot. Done correctly, honey process coffees offer a different taste profile with notable sweetness, accentuated body and generally citrusy overtones.
