Ethiopia Guji Bishan Naga Parchment Drying

There’s been a lot going on here the past few months! Back in May we brought in a new lot of our Honduras Kingdom Growers, then in July we debuted 4 new El Salvador Microlots, and in August we showcased our 2024 lot of Sumatra Lintong “Triple Pick” Tiger. But we we’re not done yet!

This month we’re very pleased to announce 5 new Ethiopia coffees from Guji and Yirgacheffe. We have a great selection of washed and naturals from several to choose from. Sourcing exceptional coffees is always a challenge, but it is always so satisfying when we get to experience them in our cupping room, and then share them with our family of roasters. Likewise, we hope you will enjoy reading the details on our new offerings from Ethiopia, the incredible birthplace of coffee, and home to some of the most sought after origins and famed cups in the business. At the same time they have become more and more difficult to secure and transport back to the states. Whatever the circumstances, it is pretty much universally agreed that they’re certainly worth the effort!

The farmers in Guji and Yirgacheffe have historically produced some of the best of the best when it comes to Ethiopia. And whether you’re in the washed camp or a classic, natural process romantic – we have some outstanding new selections for you to explore.

Guji Natural Bishan Naga

Ethiopia Guji Bishan Naga Cherries Drying

Our Guji Natural Bishan Naga is produced by 850 small farmers in the town of Shakisso. It is comprised of mixed heirloom varieties, that are handpicked, fermented and sun dried on raised beds with simulated shade netting.

Guji Natural Bishan Naga Notes:
Notes of sweet mango, peach, jasmine and blueberry jam.
Creamy body and clean finish.
Workers at the Hadeso-Testi Wash Station carefully manage the cherries while immersed in the fermentation tanks, taking great care to remove lower quality cherries prior to their placement on raised drying beds. Guji Washed Bishan Naga

Our Guji Washed Bishan Naga is produced by the same 850 small farmers that produce the natural process version detailed above. Likwise it is also mixed heirloom variety lot, handpicked, fermented and sun dried on raised beds with simulated shade netting.
Guji Washed Bishan Naga Notes:
Floral aroma. Notes of jasmine and red apple with intense sugarcane sweetness.
Medium body and sharp acidity.
Also like the Natural Bishan Nigi, the wash station workers take extreme care throughout the wash and dryin process, removing lower quality cherrie and placing only the ripest high grade ones upon the raised drying beds. Guji Natural Mootitti Nigi

Our Guji Natural Mootitti Nigi is produced by 350 small farmers in the same town of Shakisso, as the Bishan Naga lots. This one is a Grade-3 (GR3) lot of mixed heirloom varieties, which are handpicked, fermented and sun dried on raised beds at the Sewda Wash Station.
Guji Natural Mootitti Nigi Notes:
Blueberry & cherry aroma. Notes of sweet blueberry pie.
Sharp acidity and medium body.
Attention to detail by those at the wash plants and drying beds are a common theme with these Guji offerings. Fermentation tanks are carefully monitored ensuring on the highest quality cherries make it to the drying beds. Both wash station and farms are located at elevations above 6,200 feet. Yirgacheffe Washed Konga Qawissa

Our Yirgacheffe Washed Konga Qawissa is produced by 800 small farmers in the Konga Sedie village. Like the others this is a a handpicked, mixed heirloom variety – washed, fermented and dried on raised beds with simulated shade netting.
Yirgacheffe Washed Konga Qawissa Notes:
Floral notes of jasmine and orange spice with a medium body.

Workers at the Adorsi-Testi Wash Station monitor the fermentation process, as well as raised beds to ensure that the lot dries evenly and produces a great cup profile. Both wash station and farms are located at elevations above 5,900 feet. Ships in Grainpro bags.

Yirgacheffe Washed Idido Wogida

Our Yirgacheffe Washed Idido Wogida is produced by 700 small farmers in the Idido village. These varieties are also handpicked, mixed heirlooms that are washed, fermented and dried on raised beds with simulated shade netting.
Yirgacheffe Washed Idido Wogida Notes:
Lemony aroma. Sweet notes of orange and grapefruit.
Balanced acidity and medium body.

Like the Konga Qawissa above, this lot is also processed by the Adorsi-Testi Wash Station with the same skilled care and attention to detail that has yielded an excellent, sweet and citrusy balanced cup.
